طريقة عمل القرص الفلحى الطريه على اصولها:
طريقة عمل القرص الطرية الفلاحي والمعمول في المنزل بطريقة سهلة وسريعة ومضمونة واقتصادية وتصلح لوجبة إفطار سريعة أو بديل لسندوتشات الاطفال في المدرسة أو وجبة عشاء خفيفة وصحية وبكل سهولة نقدمها لكى لتقومى بتحضريها فى البيت بنفسك ..
المقادير:
- 2كيلو دقيق ابيض
- نصف كوب سمن أو زبدة بدرجة حرارة الغرفة
- نصف كيلو حليب كامل الدسم دافئ للعجن أو أكثر حسب احتياج الدقيق
- ملعقة كبيرة من الخميرة بيرة أو فورية ملعقة صغيرة سكر رشة ملح ماء دافئ للعجن
الطريقة:
نبدأ الان بخطوات عمل القرص الفلاحى الطريه على اصولها ونقوم بوضع الخميرة في إناء ويضاف لها الماء الدافئ والسكر وتترك في مكان دافئ حتي تفور وتصبح جاهزة للاستخدام وللتاكد من صلاحيتها.
ثم نحضر إناء كبير وعميق للعجن نضع فيه الدقيق المنخول مسبقا لضمان جودة العجينة ،القرص الفلاحى الطريه
ثم نضع الزبدة في قدر علي نار هادئة لتمام الذوبان .
ثم يوضع علي الدقيق ويبس حتي يتشرب الدقيق كل كمية الذبدة ثم يوضع القشطة ويوضع عليا الخميرة المذابة مسبقا ونضيف أيضا الحليب الدافئ تدريجيا ويتم العجن حتي تماسك المكونات وتصبح عجينة ناعمة الملمس
وقتها نقوم بتقطيعها ونشكلها علي هيئة كور صغيرة في حجم الليمونة وتغطي بفوطة مطبخ نظيفة حتي تتنفس العجينة وتترك في مكان دافئ لتسهيل عملية التخمير وتتكاثر البكتريا النافعة الموجودة في الخميرة
وبعد مرور ساعة كاملة نجد أن حجم العجينة تضاعفت وازدادت نقوم بتسخين الفرن علي درجة حرارة 180درجة ونفرد العجينة علي سطح مستوي وبواسطة قليل من الدقيق ونفردها بسمك 1سم وتترك لتخمر مرة أخري ويزداد حجمها
أيضا نبدأ بدهان وجه القرص الفلاحى الطريه بخليط مكون من بيضة وملعقتين لبن وملعقة صغيرة من الفانيليا ونغطي بها وجه القرص بواسطة فرشاة من السيليكون وتخبز علي درجة حرارة 180درجة مئوية لمدة تتراوح من 10 دقايق أو ربع ساعة حسب تهوية الفرن وتقدم باردة ومن هنا نكون قدمنا لكم طريقة عمل القرص الفلاحى الطريه على اصولها .
طريقة عمل المعمول الناعم :
طريقة سهلة وسريعة معمول بدون دقيق سميط . ممكن يكون سادة وممكن نحشيه بالعجوة لزيادة القيمة الغذائية لأطفالك لضمان لهم وجبه غذائية كامله العناصر المفيدة أو وجبة عشاء أو تسلية بين الوجبات
المقادير :
- كيلو دقيق ابيض
- نصف كيلو سمنة صفراء بدرجة حرارة الغرفة
- ربع كيلو حليب كامل الدسم
- كيس بيكنج بودر كامل 2كيس فانيليا أو ملعقة قرفة حسب الرغبة
مقاديرالحشوة:
- نصف كيلو عجوة مفرومة للحشوة
- 2 ملعقة سمنة للعجوة في الحشو
الطريقة :
أولا ننخل الدقيق الأبيض مرتين ويتم وضع كمية قليلة من مقدار الدقيق علي البيكنج صودا ويتم نخلهم المرة الثالثة ويوضعو بجانب
وفي وعاء آخر نضع فيه السمنة ويفضل استخدام السمنة الصفراء عن الزبدة في المعمول ونقوم بتحريكها براحة اليد في الوعاء ونستمر في التقليب حتي تنتقل حرارة اليد للسمنة وتصبح لونها فاتح وهاشة مثل الكريمة ويصبح ملمسها كريمي ناعم
ثم نضع عليها ربع كيلو الحليب ويكون دافئ مائل للسخونة بعض الشئ ونحضر المضرب الكهربائي وتضرب لمدة دقيقتين أو بالضرب اليدوي حتي تذوب حبيبات السمن وتمتذج بالحليب وقتها يضاف لها الفانيليا وتقلب ومن ثم نضع كيس البيكنج صودا المنخل وعليه الكمية القليلة من الدقيق ونخلطها مع الخليط السابق ثم تقلب براحة اليد حتي يختفي الدقيق والبيكنج صودا في الخليط السابق ذكره
ثم نقوم بوضع باقي مقدار الدقيق بالتدريج مع التقليب المستمر وليس بالعجن حتي لا نخرج من الخليط الهواء الذي تم إدخاله في الدقيق بواسطة نخله ونستمر في التقليب حتي تصير العجينة متماسكة ولينة وعند بداية تشكيلها لكرة متماسكة نتوقف عن وضع الدقيق حتي لو لم نكمل المقدار
تغطي العجينة بالبلاستيك المطاط وتترك نصف ساعه لترتاح العجينة وتشكيل بكل سهولة وقتها نشعل الفرن ويتم تسخينه علي درجة حرارة متوسطة
نجهز الحشو نقوم بوضع قدر مناسب علي نار هادئة ويوضع بها ملعقتين السمنة ويوضع عليها العجوة المفرومة وتقلب حتي تصير طرية وسهلة التشكيل وقتها ترفع من علي النار وتشكل كور صغيرة تتناسب مع حجم المعمول وانتي بالعجينة وتشكل كور صغيرة ونضع بداخل كل قطعه عجينة كورة من العجوة وتلف عليها كورة وتوضع بالقالب المدهون بالدقيق لتجنيب التصاق المعمول بها
تدخل الفرن حتي تمام النضج علي حرارة متوسطة لمدة 20 دقيقة او حسب الفرن
بعد تمام النضج وتقدم مع سكر بودر علي الوجه أو حسب الرغبة وهذه ايضا طريقة اخرى لعمل القرص الفلاحى الطريه على اصولها
ملحوظة مهمه من الفلحوسة : يجب ان توضع العجينة فى مكان دافئ حتى تخمر بطريقة صحيحة .
